Tips

NoteCut the potatoes fairly small so they finish cooking at the same time as everything else.
NoteThe lemon at the end might seem unnecessary, but I wouldn't skip it. After a pot of vegetables has simmered together, that little bit of acidity makes all the individual flavors come back into focus.

Storage

Refrigerator / FreezerUp to 4 days refrigerated or 2 months frozen; the potatoes soften further as it sits, which is honestly part of the charm.

Frequently asked

Can I use frozen vegetables?+

Yes — frozen green beans, peas, or greens stir in during the last few minutes instead of the start.

Can I add beans or pasta?+

Absolutely — a can of drained white beans or a scoop of small pasta makes it heartier; add pasta in the last 10 minutes.
