Tips

NoteSqueezing the cucumber is the important part. Skip it and the tzatziki slowly turns watery in the refrigerator.
NoteI also think it tastes better after a short rest, when the garlic and herbs have had time to settle into the yogurt.

Frequently asked

Can I use regular yogurt?+

You can, but strain it first through cheesecloth for 30 minutes — thin yogurt makes watery tzatziki.

What do I serve it with?+

Pita and raw vegetables are the classics, plus grilled meats, roasted potatoes, falafel, or honestly a spoon.
