Method

Soften the vegetables
Heat the olive oil in a large pot. Cook the onion, carrots, celery, salt, and pepper for 6 to 8 minutes, until softened. Stir in the tomato paste, garlic, thyme, rosemary, and red pepper flakes.

Simmer the beans
Add the broth and beans and simmer for 20 minutes so the broth picks up flavor from the herbs and vegetables.

Wilt the kale and finish
Add the kale and cook just until wilted. Finish with the lemon juice, adjust the seasoning, and serve with Parmesan if you like.

Frequently asked
Can I use canned beans?+
Yes \u2014 two 15-ounce cans, drained and rinsed, replace the 3 cups cooked.
How is this different from the Tuscan white beans?+
That one is creamy and skillet-style; this is a brothy soup with kale and lemon \u2014 they share beans, not personality.
Can I skip the rosemary?+
Thyme alone works, but the rosemary is what makes the broth smell like dinner instead of duty.
