Method

Preheat
Heat the oven to 400°F.
Roast the beet
Wrap the beet in foil with olive oil and salt and roast for 35–50 minutes until fork-tender.
Cool and chop
Cool, peel, and roughly chop the beet.

Load the processor
Add beet, chickpeas, tahini, olive oil, lemon juice, garlic, coriander, cumin, salt, and water to a food processor.
Blend smooth
Process until very smooth, adding additional water if needed.

Season and serve
Season to taste and finish with olive oil, sesame seeds, lemon zest, and herbs.
