Heat the oven to 350\u00b0F and line a baking sheet. Mix the flaxseed with the warm water and let it rest 5 minutes. In a large bowl, combine the oat flour, oats, almond flour, lemon zest, baking powder, baking soda, cinnamon, and salt.

In another bowl, mix the almond butter, coconut oil, maple syrup, and flax mixture. Fold the wet into the dry, then fold in the walnuts and blueberries.

Scoop and bake

Scoop 1/4 cup per cookie onto the sheet and bake 20 to 24 minutes, until the edges are browned. Cool on the pan for 10 minutes before moving them.
