Tips

NoteDon't skip the crumble in the middle. A topping is nice; finding another layer of cinnamon walnuts halfway through the muffin is nicer.

Frequently asked

Can I use all-purpose flour?+

Yes — spelt gives a slightly nuttier crumb, but all-purpose works just as well.

Do I have to sift the dry ingredients?+

It's worth it for a tender muffin. If you skip it, whisk the dry ingredients thoroughly instead.
