Method

Start the base
Melt the butter in a large pot over medium heat. Add the onion, salt, and pepper and cook about 5 minutes until soft. Stir in the garlic for 1 minute, sprinkle in the flour, and whisk 1 to 2 minutes until lightly golden.

Simmer the vegetables
Slowly whisk in the milk, then add the broth. Add the broccoli and carrot and simmer until tender, stirring occasionally. Stir in the Dijon.

Melt in the cheddar
