Method

Cook the eggplant
Heat coconut oil in a medium skillet or Dutch oven over medium heat. Add eggplant and a pinch of salt; cook 5 to 7 minutes until softened. Remove and set aside.

Fry the paste
Return the pan to medium heat. Add ¼ cup coconut milk, curry paste, and ginger. Sizzle 2 to 3 minutes until the paste mostly dries out and smells fragrant. Stir in remaining coconut milk and water.

Simmer and finish
Add tofu, bell pepper, snow peas, sautéed eggplant, and half the chiles. Simmer 3 to 5 minutes until snow peas are tender. Off heat, stir in lime juice; season with sugar and tamari if needed. Garnish with herbs and remaining chiles; serve with rice.
