Method

Sauté the aromatics

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, fennel, carrots, salt, and several grinds of pepper. Cook, stirring occasionally, for 10 to 15 minutes until very soft.

Add the pasta and simmer about 10 minutes until al dente. Stir in the kale and red pepper flakes and cook until the kale wilts. Season to taste and serve with a drizzle of olive oil.
