Cook the rice, then gently fold in the rice vinegar, sugar, and salt. Cool until just warm enough to handle.

Roll and slice

Place a nori sheet shiny-side down on a bamboo mat. Press rice over the lower two-thirds, add beet, cucumber, and avocado, and roll firmly. Slice with a sharp, damp knife and serve with sesame seeds, tamari, and pickled ginger.

Frequently asked

Can I use regular red beets?+

Yes \u2014 they stain everything a dramatic magenta instead of pink stripes; the flavor is identical.

My rolls fall apart when slicing \u2014 why?+

Either the rolls were overfilled or the knife was dry. Use a very sharp, damp knife and a sawing motion rather than pressing down.

Do I need a bamboo mat?+

It helps a lot with even pressure, but a folded kitchen towel inside a plastic bag works in a pinch.
