Method

Whisk the wet
Whisk eggs, almond milk, applesauce, and vanilla.
Pulse the dry
Pulse flours, sugar, baking powder, spices, and salt in a food processor.
Cut in the coconut oil
Pulse in hardened coconut oil.

Add the apple
Stir in apple, then fold in the wet ingredients.
Chill the dough
Form into two disks and freeze for 20 minutes.

Cut the wedges
Cut each disk into six wedges.
Bake
Bake at 400°F for 15–17 minutes.

Glaze
Cool, glaze, and add pecans.
