Method

Mix the oats
Heat the oven to 300°F and line a baking sheet with parchment. In a large bowl, stir oats, nuts, coconut flakes if using, cinnamon, and salt. Drizzle in coconut oil and maple syrup, add almond butter, and stir until everything is coated. Press into a 1-inch-thick oval on the sheet so clusters can form.

Bake gently
Bake 15 minutes, rotate the pan, and gently break the oval apart with a fork. Bake 15 minutes more until golden. Sprinkle dried cranberries on at the end if you like.

Cool and jar
Let the granola cool on the sheet about 15 minutes so it crisps. Break into clusters and store in a jar. Serve with yogurt, milk, or little fingers straight from the bowl.
