Tips

NoteThe blender is what gives these their lovely texture, so I wouldn't simply whisk the cottage cheese into the eggs.
NoteThey freeze well too. A small freezer bag of egg bites makes Monday morning considerably less annoying.

Frequently asked

Can I use low-fat cottage cheese?+

Whole-milk gives the creamiest texture, but low-fat works — the bites will just be slightly less rich.

Can I add other vegetables?+

Yes, just keep the add-ins chopped small and not too wet so the centers set properly.
