Method

Prep the pans and dry mix
Heat the oven to 325\u00b0F and grease two 8x4- or 9x5-inch loaf pans. In a large bowl, whisk the flour, cinnamon, baking powder, baking soda, and salt.

Make the batter
In another bowl, whisk the sugar, oil, eggs, and vanilla. Fold in the grated zucchini, then add the dry ingredients and stir only until combined. Fold in the walnuts.

Bake and cool
Divide the batter between the pans and sprinkle extra walnuts on top. Bake 40 to 55 minutes, until the tops spring back and a toothpick inserted in the center comes out clean. Cool before slicing.
