Method

Start the sweet potatoes
Heat 2 teaspoons of the avocado oil in a large lidded skillet over medium heat. Add the onion, poblano, garlic, and a pinch of salt; cook 3 to 5 minutes, until softened, then transfer to a plate. Add the remaining oil and the sweet potato with another pinch of salt and cook 8 to 10 minutes, stirring occasionally, until fork-tender.

Wilt the kale and crack in the eggs
Return the onion mixture to the pan. Add the chili powder and kale and stir until the kale starts to wilt. Make four shallow wells and crack in the eggs. Reduce the heat to medium-low, cover, and cook 3 to 5 minutes, until the whites are set to your liking.

Finish and serve
Season with salt and pepper and finish with avocado, cilantro, hot sauce, and lime wedges.
