Brown the mushrooms

Heat 2 tablespoons olive oil in a Dutch oven or deep skillet over medium heat. Add the mushrooms with 1/2 teaspoon salt and several grinds of pepper. Cook, stirring only occasionally, about 8 minutes until soft and browned. Remove and set aside; work in batches if needed.

Build the risotto

Wipe the pan and add the remaining 2 tablespoons oil, the onion, and the remaining 1/4 teaspoon salt. Cook 5 to 8 minutes until soft. Stir in garlic, thyme, and rice for 1 minute, then add the wine and cook until mostly absorbed. Add warm broth 3/4 cup at a time, stirring often, waiting until each ladle is nearly absorbed before the next.

Finish and serve

With the last broth addition, stir in two-thirds of the mushrooms. Cook until creamy with a slight al dente bite. Stir in the cheese, season to taste, top with remaining mushrooms and parsley, and serve with more cheese.
