Method

Roast the squash and vegetables
Heat the oven to 425\u00b0F and line two baking sheets. Rub the squash halves lightly with olive oil and salt, place cut-side down, and roast 25 to 40 minutes, until fork-tender. On the second sheet, toss the mushrooms and sage on one side and the red onion on the other with olive oil, salt, and pepper; roast 18 to 23 minutes, until browned and tender.

Make the dressing and the filling
Whisk the apple cider vinegar, maple syrup, garlic, salt, Dijon, and pepper; slowly whisk in the olive oil. In a large bowl, combine the rice, roasted mushrooms and onion, apple, feta, parsley, cranberries, pecans, and pepitas with a pinch of salt. Toss with about half the dressing.

Fill and serve
While the squash is warm, brush the flesh with a little dressing and season. Pile in the rice mixture, finish with extra sage, and serve the remaining dressing on the side.
