Method

Whisk the batter
Whisk flour, sugar, baking powder, baking soda, and salt. In another bowl whisk eggs, olive oil, milk, zest, and lemon juice. Fold wet into dry until just combined.

Bake until golden
Pour into a greased 8-inch pan. Bake at 350°F (175°C) for 28 to 35 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then on a rack.

Slice and serve
Dust with powdered sugar if you like. Slice and serve at room temperature.
